A New Giveaway & S'Mores Cupcakes



I follow so many blogs now, I have trouble keeping up with them all. One of my favorites is Our Best Bites. Sara and Kate have some really great recipes. Their new cookbook is just fantastic. And it's HUGE - 272 pages!!  The book publicist, Ashley Jones, sent me a copy plus one for a giveaway.  I LOVE it! I've already ordered one for my sister. 

To be the lucky winner of a copy of Our Best Bites, become a follower of this blog and leave a comment on this post. For a second entry, "like" The Hillbilly Chicks on Facebook by clicking  here then leave a comment telling me that you did. For a third entry, post about this giveaway on Twitter and leave another comment letting me know. For a fourth bonus entry, post a link to this contest on your Facebook wall and leave another comment on this post. This giveaway will be open until Friday, June 17th. The winner will be chosen in a random drawing and announced on Sunday, June 19. Good luck everyone! 


And now for my S'mores Cupcakes...

I know I've talked about food nostalgia before, but I love it when something as simple as a cupcake starts a family conversation that begins with "Remember when..." And who doesn't have a campfire memory that involves S'mores?  These cupcakes put a new twist on the classic campfire dessert. They are absolutely delicious and make the perfect ending to a summer meal. Ally's face actually lights up when I make them. Be sure to give this recipe a try!

S'mores Cupcakes
24 Chocolate Cupcakes (your favorite recipe)
Marshmallow Fluff Icing (recipe below)
Graham Cracker Crumbs
2 Hershey Bars

Marshmallow Fluff Icing
1/2-3/4 lb. (2 or 3 sticks) butter, room temperature
1 lb. (2 cups) confectioner's sugar
1/2 tsp. vanilla
16 oz. tub of marshmallow cream

Cream the butter on high until it's light and fluffy. Add the confectioner's sugar, 1/4 cup at a time, and beat until fluffy each time. Add vanilla - mix until incorporated. Add Marshmallow Cream and mix until creamy. Transfer to pastry bag and pipe onto cupcakes! (You can also cut the corner off a Ziploc bag and use that instead.) Dust top with graham cracker crumbs and top with a square of Hershey's chocolate.
