Do you love cobbler? My mom especially enjoys peach cobbler, so I surprised her with one a few days ago. I had canned peaches on hand so I went ahead and used those. You could just as easily use fresh peaches, but since we're trying to watch our budget {and who isn't?}, I went with what we had. I love making my cobblers in a cast iron skillet. The crust gets a wonderful crunch to it. Served with vanilla ice cream, it's the perfect ending to a summer meal.
Peach Cobbler
1 stick butter
1 cup sugar
1 1/2 cups self-rising flour
1 1/2 cups milk
2 15-ounce cans peaches in heavy syrup
Preheat oven to 350. On stove top, melt 1 stick butter in cast-iron skillet. Mix sugar, flour, and milk until smooth. Pour mixture over melted butter (do not sir). Carefully spoon fruit and syrup on top. Bake for 30 to 45 minutes or until golden brown on top. Batter will rise to top during baking. Serve with vanilla ice cream.
