Landon is so funny. He loves everything about his exersaucer except for actually sitting in it. He much prefers to sit on my lap & reach over to play with the toys on top. And now he's discovered it's fun to hide beneath it too. He's quite the explorer now.
I was walking through the living room Saturday morning when I heard Sandra Lee mention a pie recipe she received from a WV girl. I stopped to watch for a few minutes & knew then that I would be making that same pie for dessert on Sunday. Peanut butter, chocolate & no oven required - what could be better? I will warn you though - this pie is so rich it could easily serve more than 8 - just cut the slices very thin.
Peanut Butter Pie
1/2 cup peanut butter
1 cup powdered sugar
1/4 cup milk
1 teaspoon vanilla extract
1 (8-ounce) package cream cheese
1 (8-ounce) tub whipped topping
Ice cream topping (recommended: Magic Shell)
1 cookie pie crust (recommended: Oreo)
Directions
In large bowl combine all the ingredients except the toppings and crust. Blend with a hand mixer. Gently fold in whipped topping; pour into prepared crust and freeze for 2 hour. Once frozen, drizzle with ice cream topping and re-freeze for 20 minutes.
Thaw slightly before serving and cut into slices.
