Weekends Fly By

Wow...the weekends fly by. I had all sorts of things planned for the weekend that I didn't get to {including my wreath which I will get to sometime this week}. It was still a great weekend though. We were invited to our friend's house for dinner on Saturday, along with my sister & her new husband. Cherrie & Rob fixed a fantastic meal on the grill. It was great being together & just catching up with everyone. And Landon was such a good boy. I'm always nervous about taking him to new houses because he's EvErYwHeRe now & is having a love affair with electrical outlets.

Today was a rainy day so I decided to fix a pot of white beans using the same recipe my mom & grandma use. The broth is so delicious & Landon could not get enough. He had bean broth with french bread mushed up together {a little thinner than his rice cereal}. And for dessert my mom brought us some homemade apple dumplings. How sweet is she?!

And just when I was getting ready to put our little man to bed before Desperate Housewives came on, he fell & bumped his little head. Oh, how my precious boy cried {after holding his breath for what seemed like forever}. He's completely fine now, but I'm sure my heart actually stops any time he gets hurt. I know I have to toughen up now because there's sure to be lots of boo-boos in the future.

White Bean Soup
1 lb Navy Beans (they are so little)
1 stick salted butter
water
salt

Soak beans overnight. Drain & rinse well. Put in pot along with butter. Fill pot with water. Bring to a rolling boil. Keep water level the same for about 2 hours or until beans reach desired tenderness. Cover & reduce to a simmer to thicken broth. Serve with french bread or buttermilk biscuits.

  1. Sounds like you had a very busy weekend! Oh how I love white beans, my Mother used to cook them all the time. I don't cook them to much because my family really doesn't care for them. Great blog! Thanks for visiting, hope you come around again soon. I'll have to admit you are the first blogger from WV I have had the chance to talk to.
