Easy Chicken Rice Burritos


It was a scorcher of a day here yesterday. Landon spent a little bit of time in his swimming pool but it was just too hot to keep him out very long. The heat exhausted our little man and he was ready for bed early. We're going to the town pool on Saturday so daddy can have some swim time with us.

The heat exhausted me yesterday too and I didn't really want to spend much time in the kitchen preparing dinner. The Pillsbury email could not have arrived at a better time. 10 minutes of cook/prep time and dinner was on the table. I didn't follow the recipe exactly, but it was tasty and quick.


Easy Chicken Salsa Rice Burritos
1 cup  Thick ‘n Chunky salsa
1/2 cup water
1/2 cup uncooked instant white rice
3/4 cup shredded deli rotisserie chicken
1/2 cup shredded Cheddar cheese (2 oz)
Sour cream
Flour tortillas for burritos (four 8-inch tortillas), warmed
Shredded lettuce, if desired
Chopped tomatoes, if desired

In 1-quart saucepan, heat salsa and water to boiling. Stir in rice. Cover; remove from heat. Let stand 5 minutes. Stir in chicken.  Spoon 1/2 cup chicken-rice mixture onto center of each tortilla. Add cheese and sour cream. Fold and serve.

  1. Landon looks so happy in his pool , a great way to cool off on a scorcher of a day. Love this recipe will be trying ,should be good on a hot day so doesn't heat up the kitchen.
